Meet: Flock and Herd
This month we're getting to know Charlie Shaw, owner of Flock and Herd butchery...
Flock and Herd are a fantastic little outfit in Peckham’s Bellenden Road who really know they’re stuff - we love working with them.
Their small team of dedicated butchers have some serious skills, expertise and knowledge enabling them to work with whole carcasses. We often ask for advice on which cuts are best suited for certain dishes and cooking recommendations and the boys are always happy to help. Drop in to one of our supper clubs to see what they've recommended for us this month.
When and how did Flock & Herd begin?
CS: 5.5 years ago just after the London Olympics. I’m quite local and loved the street and range of shops.
What is it you love most about your job, and what’s the most challenging part?
CS: Every day is different, building customer relationships and seeing our customers happy enjoying the product and service. Long hours can sometimes make the job hard and working every Saturday.
What’s been the most memorable moment so far and why?
CS: I was sat in a fish and chip shop in Hackney and a lady walked passed with a Flock and Herd bag. Also winning the title of “London’s Best Sausage” ...no joke!
What food could you not live without?
JB: Seems a good choice considering! I, probably too often, treat myself to some sausages when I come in to collect orders. You guys have some inventive varieties, the ploughman’s one made the ultimate sarnie.
Do you have a favorite food memory?
CS: Every Christmas dinner
JB: I have to say my family were very happy with your suggestion for the four rib alternative. Not sure we will ever have turkey again.
Who would you invite round as a special dinner party guest?
CS: Emma and Jess.
EP: Hmmmm...such a charmer!!
What do you want from the bar?
CS: Always a pint of lager!
JB: … what about the pork scratchings?
